Collection. Tea is harvested early in the morning, when the dew has not yet fallen. Chinese women are responsible for this process. The day before, they do not eat garlic, onions, spices, and do not drink alcohol, so that the smell does not spoil the aroma of the leaves.

Processing. The collected raw materials are dried in the sun, periodically placed in the shade for drying, then dried in ovens. After processing, the leaves turn brown and become dark.

Secrets of cooking “Peony”

  1. To brew tea, use an isipot with a button or a gaiwan.

  2. Pour boiling water over the teapot (to warm it up).

  3. Put dry “White Peony” tea in a teapot: 5–7 g per 120–150 ml.

  4. Fill with water, the temperature of which is 75–85°С. This can be easily achieved without using a thermometer. Just open the lid of the boiling kettle and wait 5 minutes.

  5. Brew tea in batches. The first brewing time is 10–15 seconds. Subsequent brews should be a maximum of 1 minute each.

Be sure to pour the first brew into the sink, as it is intended for washing the tea leaf and opening it.




The taste and aroma of “White Peony”


Aroma The smell is delicate, barely perceptible, with sweet honey and fruity notes. The magic of this tea lies in how harmoniously the aroma of the leaves and the smell of the buds combine.

When choosing Pai Mu Tan, pay attention to the ratio of buds and tea leaves. If there are many buds, they are fluffy and fluffy, then you have a real “White Peony” from Fudin.


Taste
